Raw artichoke salad

Serves 2
1 tbsp mustard
2 tbsp apple cider vinegar
4 tbsp olive oil
3 artichokes
1 fennel bulb
Dill flowers
Salt and black pepper


Whisk the mustard and apple cider vinegar together in a small mixing bowl. Gradually blend the olive oil into the mixture. Season with salt and pepper and put aside.

Slice the artichokes and fennel using a mandolin slicer. Put in a large bowl and mix.

Add the dill flowers.

Mix in the sauce you set aside earlier.

Season with salt and pepper.
