Walnut & Raisin Bread

An easy way to use dried nuts and fruits in a healthy, nutritious and easy-to-do bread recipe. You can use walnuts and raisins as well as other dried nuts and fruits to add flavor to this delicious bread.

350 ml - 3 1/3 cups of water - luke warm
5 g - 1/2 tbsp of fresh yeast
450 g- 3 ¼ cups of whole wheat flour
7 g - 1 tsp of salt
60 g- 1 cup of walnuts
50 g- 1 cup of raisins-soaked in water for 20 min

Method

Place yeast and water in a cup and leave to activate for 10-15 minutes.

Place flour and salt into a mixing bowl and make a well in centre. Add yeast mixture, until dough forms together. Add walnuts and raisins, mix.

Knead on a floured surface for 10 minutes. Allow to prove by placing in a lightly oiled mixing bowl, covered with a cloth. Leave in a warm place until double in size. Preheat the oven to 200°C.

Use the bowl scraper to release the dough and turn it out onto a lightly floured board. Shape into a ball, seam side down. Allow to bench rest for 15 minutes cover with a cotton cloth.

To bake the bread gently move the dough to a parchment lined baking sheet. Dust with sifted flour, score with a sharp paring knife. Transfer the baking sheet in the oven. Apply Steam 3 and shut down the door and bake for 20-25 minutes.

Let the bread cool completely on a cooling rack.
